Description:
Severosso comes from a dedicated parcel within our hillside vineyard. It is the oldest section of the vineyard, the same one that was tended by my father, with vines that are 50 years old. Old vines naturally produce lower yields, but they are able to deliver remarkably consistent fruit quality, even in more challenging vintages.
Their extensive root systems allow the vines to reach deeper layers of soil and access water reserves during prolonged periods of drought. This greater resilience to climatic conditions contributes to more consistent grape quality from year to year. Older vines also tend to produce wines with greater complexity, concentration and depth, in which the mineral character of the terroir can emerge more clearly alongside, rather than being dominated by, the varietal fruit profile.
This age is particularly valuable in late-ripening varieties such as Cabernet Sauvignon, helping to develop exceptional complexity and elegance while preserving balance and freshness.
The Severosso vineyard is trained using the Guyot system, with a planting density of approximately 3,500 vines per hectare and a yield of around 60 quintals per hectare.
